A classic South African Dessert

Ingredients

  • 1 cup sugar

  • 1 large egg

  • 2 tbsp butter

  • 1 tsp vanilla essence

  • 1 tbsp apricot jam

  • 1 cup self-raising flour

  • Pinch salt

  • 1 tsp bicarbonate soda

  • 1 tbsp vinegar

  • 1 cup milk

  • For the sauce
  • 125g butter

  • 1/2 cup sugar

  • 1 cup milk

Directions

  • In a large bowl beat the sugar and egg, beat until creamy. Mix in vanilla essence.
  • Beat in melted butter and jam.
  • Sift flour and salt into the wet mixture and mix until well combined.
  • While mixing, slowly add milk.
  • In a small bowl, add bicarb and vinegar, now add to the batter and mix with a spatula.
  • Pour batter into a well greased ovenproof dish.
  • Bake at 190°C for 35 mins until the top is nicely browned.
  • For the sauce
  • Melt all the butter and sugar together in a small pot over a medium heat.
  • Once butter and sugar has melted, add milk and let boil.
  • Pour mixture over pudding before serving, preferably while it’s still hot.
