I have made a lot of crumpets in my life and this one is hands down my favourite recipe.
These pancakes are the perfect base for ice-cream, drizzled with ice cream and topped with slices of banana.

SOFT AND FLUFFY CRUMPETS

Ingredients
2 cups self-raising flour
Pinch of salt
2 tablespoons sugar
2 eggs
1 teaspoon vanilla essence
2 tablespoons melted butter
2 cups milk
Directions
- Sift dry ingredients into a large bowl
- In another bowl, whisk eggs and milk
- Add wet ingredients to dry ingredients, mix well
- Mix in vanilla essence
- Stir in melted butter until mixture is smooth
- Heat a pan and grease lightly with butter
- Drop spoonfuls of batter into pan, when bubbles appear on the top, flip to the other side
- Let each side brown evenly
Notes
- Control your heat, if your pan is too hot, crumpets will burn on the outside and be raw on the inside
