These soft and fluffy pancakes, best known as crumpets in South Africa are the best things you can have on a Saturday morning.

I have made a lot of crumpets in my life and this one is hands down my favourite recipe.

These pancakes are the perfect base for ice-cream, drizzled with ice cream and topped with slices of banana.

SOFT AND FLUFFY CRUMPETS

These soft and fluffy pancakes, best known as crumpets in South Africa are the best things you can have on a Saturday morning.

Ingredients

  • 2 cups self-raising flour

  • Pinch of salt

  • 2 tablespoons sugar

  • 2 eggs

  • 1 teaspoon vanilla essence

  • 2 tablespoons melted butter

  • 2 cups milk

Directions

  • Sift dry ingredients into a large bowl
  • In another bowl, whisk eggs and milk
  • Add wet ingredients to dry ingredients, mix well
  • Mix in vanilla essence
  • Stir in melted butter until mixture is smooth
  • Heat a pan and grease lightly with butter
  • Drop spoonfuls of batter into pan, when bubbles appear on the top, flip to the other side
  • Let each side brown evenly

Notes

  • Control your heat, if your pan is too hot, crumpets will burn on the outside and be raw on the inside
